Traditional Mexican cuisine faces loss of ancestral recipes, says chef Maru Toledo

Guadalajara, Jun 18 (EFE).- On Sunday, chef and advocate Maru Toledo highlighted the worrying loss of ancestral recipes from Mexico's indigenous communities as a generation of women connoisseurs passes away. These women possess invaluable culinary wisdom that imbues traditional Mexican cuisine with unparalleled flavour, she explains in an interview.

Toledo, who is dedicated to preserving the recipes of the mestizo gastronomy of western Mexico, emphasised in conversation with EFE that disseminating and making these dishes and drinks accessible to urban diners, particularly the younger generations, is a way of preventing the disappearance of these recipes.
