Chefs gather in Guadalajara to celebrate Mexican culinary wonders of ‘Mole’

Guadalajara, Jul 22 (EFE).- Mole, a dish that embodies the rich diversity of ingredients in Mexican cuisine and is considered an intangible heritage of humanity, was celebrated on Saturday by chefs gathered in Guadalajara in western Mexico.

Mole, also known as "mulli", has its roots in pre-Hispanic times and is a culinary masterpiece made from a mixture of chillies, pumpkin seeds, and red tomatoes.

Its preparation can include up to 50 other ingredients, which vary according to the region of the country.

Beyond being a culinary delight, mole reflects the festive and celebratory spirit that characterises Mexican culture, making it an important part of the country's culinary heritage. (Camera: JOSÉ LUIS GONZÁLEZ).
